yummy vegetable kugel: celery, peppers, onions, potatos (all peeled)- massive hit. I only make it on Pesach, but really should import it for year round use.

We eat gebrokts, and everyone loved the cranberry-pineapple kugel (from Passover by Design). Really easy and delicious.

another vote for potato kugel. We tried an eggplant/zucchini/carrot kugel but it didn't fly.

Sure, here it is:
2 large onions, diced
4 stalks celery, diced
2 peppers, diced (any color, though I prefer red or orange)
4 carrots, shredded
8 eggs
3 tsp salt
black pepper
8 Idaho potatos

Preheat oven to 375 and grease a 9x13 pan or 2-8"pans.
Saute veggies aside from potatos till limp and slightly colored.
Beat eggs, salt and pepper in large bowl.
Grate potatos.
Add veggies and eggs to grated potatos and mix well.
Pour into prepared pan and bake 45-60 min till brown and crusty.
(This freezes very well.)

we only have potato kugel.
I learned to cook not gebrokts because of my father's minhogim so I don't know how to use matzo meal in any form!

so far I loved sunshine!'s two tone kugel, the kids liked it, and no one else did Sad I hate that, will have to make sure I have a little for myself at least!

I used the apple kugel from aish's website, the kids loved it, my mom liked it, I thought it was ok, and no one else would touch it.

So hard to find something that pleases everyone! I wanted something different than the usual potato kugel, but I think I'll go back to it for the last days.
