Lowfat potato kugel a la Chavie Goldman
with my changes, of course
We like Aish HaTorah's Taste of Shabbos cookbook's potato kugel but I wanted something lowfat, so this is my version.
4 potatoes
1 small onion
2 eggs
1/2 cup seltzer
2 tsp salt
1 tsp pepper, approx
Spray small baking pan and preheat your oven to 350 deg.
Put all ingredients but potatoes into your food processor, with the blade. You peel your potatoes & then cut them up, adding to workbowl. Process until fine. Pour into pan and bake about an hour.
If you prefer your potato kugel shredded, put all ingredients but potatoes in bowl. Either shred onion with potatoes or grind first, then change blade. Shred your potatoes, adding quickly to bowl and then pour into pan and bake.

I have a recipe from Diet Center which calls for potatoes, squash, and egg whites. I'll also try this one. Thanks.
