The problem with making sorbet with sugar replacements is that unlike real sugar Splenda and the like do not change the freezing point of the sorbet so what you end up with is something that is frozen hard like a rock and unscoopable. You could try re-blending after it freezes if you have a blender that can crush ice or you can try adding alcohol to change the freezing point, but then you might end up with l'chaims and not dessert.

I am interested in this as well. I buy splenda by the big bag. They claim that volume measurements are the same but I found out it is better to use less, just as sweet and less aftertaste. I will try to cook one up for this Shabbos and be"H if it works I will let you jnow. I also have too many lemons so what flavor is not a hard one either.

You can take a sorbet out of the freezer several times and stir it up. That won't help? Alcohol is great but for those of us who sugar is a no-no then usually alcohol is off the list as well. It is for me.

You can try using Stevia as a sweetener.... it's from a plant, and they say several thousand times sweeter than sugar.
