You can use a cake mix, if you have one. Or.....

Easy Chocolate Cake
This is a recipe I got from Miriam who never used to share recipes.
Mix 2 cups flour, 2 cups sugar, 1/2 cup oil, 1 tsp baking soda, 1 tablespoon instant coffee, 1 cup water, and 2/3 cup cocoa. Add 2 tsp rum and 3 eggs. Mix well. Bake in 9 by 13 pan or 12 cupcakes at 350 for about half an hours. Enjoy!

Easy frosting is - take cake out of oven when done, and then sprinkle with chocolate chips.

they will melt and make a gorgous coating. which you then can serve as-is, or sprimkle with nuts, toasted coconuts, or sprinkles, as you like.

I forgot - be sure to spread the chips out with a spoon or knife as they will melt.

It's a bit expensive for frosting, but very easy and tasty. Enjoy it!

I make a great one in a bundt pan. So easy and yummy. It's from the Feldheim hardcover cookbook( it lists nutrition facts too - if anyone's into that!)

From Spice and Spirit Classic Chocolate Cake

4 eggs
1 1/3 cups oil
2 1/4 cups sugar
1 1/2 tsps. vanilla extract
2 3/4 cups flour
3 tsps. baking powder
1 1/2 tsps. baking soda
1/2 tsp. salt
1 cup cocoa
1 3/4 cups strong hot coffee
9x13 baking pan

Preheat oven to 350 F

Grease bottom of 9x13 inch pan

In large mixer bowl, cream eggs, oil, sugar, and vanilla. In small bowl combine all dry ingredients except cocoa. Mix cocoa together with hot coffee. Add dry ingredients alternately with liquid to mixer bowl, ending with dry ingredients.

Bake for 1 hour or until toothpick inserted in center comes out clean. Allow to cool on cake rack and frost with frosting or glaze of your choice.

I never made it so can't verify goodness. However, this is my go to chocolate cake that I make all the time. It comes out really moist, it's a one bowl only recipe.

3 cups flour
2 cups granulated sugar
2 cups cold water
1/2 cup oil
1/2 cup Dutch processed cocoa
2 tablespoons vinegar
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons vanilla extract

In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make a well in the flour mixture. Put in vanilla, vinegar, and oil. Pour the cold water over the mixture and stir until moistened. Pour into 8 x 8-inch pan. Bake at 350 F for 25 to 30 minutes, or until toothpick comes out clean.

2 1/2 C sugar
1 C cocoa
1 tsp. salt
2 tsp baking soda
1 1/2 tsp baking powder
1 1/3 C oil
1 1/2 C water
Mix together well and add:

Just by the way, the Ultimate Chocolate Cake from the Kosher Palette is ridiculously good and moist and chocolaty! Even my BIL, who "doesn't like dessert" LOVED it!
My sister made up the glaze.

Ultimate Chocolate Cake
(The Kosher Palette)
What makes this the ultimate chocolate cake is its versatility. It can be made in 5 minutes and in any shape. It can be made in advance and freezes with ease.

1 ¾ cups flour
2 cups sugar
3/4 cup cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1 cup non-dairy creamer, milk or water
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 large eggs, lightly beaten
1 cup boiling water

Preheat oven to 350. Grease and flour the pan of your choice.
Combine sugar, flour, cocoa, baking soda, baking powder, and salt in a large mixing bowl, stirring until well blended.
Add milk, oil, vanilla, and eggs; beat at medium speed with an electric mixer for 2 minutes, occasionally scraping down the sides of the bowl.
Fold in boiling water with a spoon or rubber spatula.
Bake for 25 to 50 minutes or until toothpick inserted in the center comes out clean.

Chocolate Glaze

1 cup confectioners sugar
1/2 cup cocoa
1 teaspoon vanilla
1/8 cup canola oil
1/8 cup chocolate liquor or
1/4cup of oil
Hot water

Mix all ingredients except the water
Add hot water by tablespoons until you get the consistency that you want.
