My sister is weight obsessive and now her 7 year old daughter only wants to eat salad... that really scares me. Am I the only one who finds this absolutely frightening! I am not ready to be a role model for my daughter... I lack in so many areas that I would hate to see her learn from me.

As to your niece, I wouldn't worry too much about a 7 year old's pronouncement, unless she has kept it up for a long time, and is showing signs of malnutrition.
As for your larger issue of ourselves as role models, what can I say? We are human. We can only try our best, and hope that our own efforts to grow serve as the most important role model of all. I hope my children will forgive me for my mistakes and imperfections, as I forgive my parents for theirs.
