Depending on what size your loaf is. I currently have in my freezer a 1 lb loaf , 1 1/2 lb and 2 lb loaf

For 11 people. Is one loaf enough?

It depends on how generous you will be. I make medium-thin slices and get about 11 including ends. If you want to be generous you may need more.

plenty. its only a starter - you don't want people to fill up on fish.

Depends if you're plating it or not. If it's on a serving plate, someone might want more than one piece. The only problem is, you'll probably have quite a bit of leftovers if you make 2 rolls. Personally, I'd make 2 loaves even if I have leftovers.

You can cook only half a roll too - just cut before cooking in a small pot. That's what I do if we don't have guests for more than one meal. Alternatively, you can freeze cooked gefilte fish. It tastes fine after.

I take the frozen loaf out of the freezer for a few min. and then I cut it in half with a knife, and put half back in the freezer for another time. That way you can cook 1.5 loaves. You also have to remember that not everyone eats gefilte fish. You best bet is to serve it on a serving plate for people to take what they want.

If I make another one and freeze the leftovers-- or half of it-- how do I defrost it when we want to eat it agian? do I need to put it in the oven, or just leave it out and serve?

also, can I cut up the gefilte fish today for tomorow (to see how many peices it is) or is it better to cut the same day as serving?

Thanks.

You can cut it today and serve tomorrow just keep it tightly covered. A regular loaf is 8 decent slices but if you are worried then get a large loaf. Many stores carry that. You should put the other half back in freezer uncooked.

You can also cook and freeze aftyer. To serve, just defrost and serve that way. Sometimes it is a bit more crumbly, but otherwise should be pretty much the same.

I give the ends to my kids. then I can get 10 - 12 slices
otherwise, forget it!

I have a friend who defrosts the loaf, adds some onions, carrots, and matza meal, and then forms balls. she boils them, and puts them on a stick with cooked carrots and other veggies, and calls it 'fish kabob' - makes one loaf go a LOT farther, and is a creative take on the same old gefilte fish

When I freeze ready cooked gefilte fish, I freeze the sauce seperate to the cooked log.
I get about 10 slices (1/2 inch) for 5 people, I usually serve 2 per person.

You can also defrot half the log and fry the slices, or first form into balls/patties and then fry. kids love it.
