I bought a large bag of broccoli cuts and would like to turn it into 1-2 kugels for the yomim tovim. I only buy frozen broccoli for special occasions since the "kosher" brand is so expensive here. Please help me make the best kugels possible to make it worth my while!
I would prefer something without tons of mayo in it, and not too crumbly.

My favorite recipe is the one from Spice and Spirit and is called Creamy Broccoli Kugel.
It uses non dairy creamer and margarine, but it's soooo good.

I don't know where mine is from, but it has 1/2 cup mayo, 1/2 cup creamer (I sue soy milk) and 1 1/2 T of margerine.
Here it is:
20 oz chopped broccoli
1 1/2 T margarine
1/2 cup mayo
1/2 cup creamer or soymilk
2 T flour
1 packet Onion soup mix or a few tablespoons from a jar + salt to taste
3 eggs
Corn Flake Crumbs
Spray a 9"round pan and sprinkle corn flake crumbs to cover the bottom. Cook bBroccoli and drain well, pressing out liquid. Pulse in food processor a little at a time until fine. Add all ingred and mix well. pour over crumbs and top with crumbs. Bake @ 375 for 45-55 min until browned a little.
*I leave out the cornflake crumbs on top and bottom for fewer carbs and it's fine.
