I think that is the same recipe I have, but I make it with extra sauce and tomatoes - then none of it dries out even around the edges.

I grill different vegetables and add it to the layers.
it gives it a whole different wonderful taste.

Spice and Spirit cook book page 220-221

Sauce:
2 med. onions diced
1 green pepper diced
2 tbsp. oil
1 1/2 lbs. ground beef
6 oz can of tomato paste
15 oz tomato sauce
1 tsp. garlic powder
1/2 tsp. basil
1/2 tsp. oregano
1 tsp salt
1/4 tsp pepper
1 Tbsp. brown sugar


Sauce:
Saute onions and peppers in oil in a 10 inch skillet until soft. Add
ground beef and brown, stirring to break lumps. Add tomato paste,
tomato sauce, garlic powder, herbs, salt, pepper and sugar. Reduce
heat and simmer covered fro 20 minutes.


8 oz lasagna noodles
1/2 tsp oil

Fill 6 quart pot half full of water. Bring to a boil. Boil lasagna
noodles until tender. add 1/2 tsp. oil to prevent sticking. Rinse
noodles in a colander with cold water and drain.

2 large eggplants
1 tsp. salt
1/4 tsp pepper
matzo meal
2 eggs beaten
oil for frying


Peel and slice eggplants. add salt and pepper to matzoh meal. Dip
eggplant slices first in egg and then in matzoh meal. Heat oil in a 10
inch skillet at least 1/4 inch deep and fry eggplant until nicely
brown.

Preheat oven to 350.

Layer ingredients in a 9X13 baking dish as follows: sauce, noodles,
eggplant, sauce repeating layers and ending with sauce on top. Bake
for 1 hour and a half.
