Since someone asked a similar question...

I have not been liking my potato kugel so much lately, and I LOVE Chap-a-Nosh potato kugel. Anyone have a recipe that comes out something like that?

Yes, that's true - extra onion moves it in the right direction.

Consistency - it's dense and solid, but soft. Did that make sense? It seems egg-y to me, but adding more eggs to my kugel made it weird and definitely did not achieve the desired effect.

they also add flour- more egg plus flour gives it that consistence

I know someone who makes a deliciously dence, but soft kugel. Best kugel ever. Lots of salt. Heavy.
Pan gets finished in minutes, even if there are just a few people around. If you want to recipe, let me know.

vitamin c is citric acid... buy it at any health food store in tasteless powder form. I tablespoon is enough for 7 potatoes.

My mother's potato kugel is the best! her secret, she puts in a very generous amount of oil. I love the taste of her kugel, but can't bring myself to put in that much oil. She makes lots of kugels and just pours in straight from the bottle. Her kugel is heavenly!

I do!

1 (5 lb.) bag potatoes
9 eggs
1/2 onion, grated
1/2 cup oil
salt to taste (lots!)
pepper to taste

Thanks for the recipe, ra_mom! Any idea approx. how many med. potatoes 5 lbs. comes out to? I usually use about 6 potatoes (half a 9x13 pan).

So, maybe I'll try with more egg, oil and flour (I do use some flour already - I use the Lub. cookbook recipe - but I leave out the baking powder and haven't noticed a difference). Citric acid - that's interesting - I think that's pretty easy to get around here - people also use it for laundry and all kinds of intersting things. Maybe I'll try it.

Btw, is it important to rinse the potatoes in a collander after they're grated? I don't usually bother - I just make sure to make the kugel quickly before they start turning black.

And what temp. is best for baking - high or low? I usually do it at 350. (I'm not interested in doing it overnight.)
