I made beef lo mein for shabbos. It came out very good and I'm happy with the recipe. I am having some trouble with the methodology. 1st, the meat was a drop dry so I'm wondering what type of meat should I have used. 2nd, how do you make the meat? do you do it seperately and then add it to the lomein? do you boil, bake or fry it? or s/t else? any further tips would be great. tia.

I don't know if this will help any, but when I make chicken lo mein, I fry the vegetables, then remove them from the pot and fry the chicken. When the chicken is almost ready, I add the vegetables and fry them together.
