We just found wout that we are having extra guests, looking in my freezer only meat left is a chuck roast-what can I do with it? I am already making a sweet cranberry meat, (and some sweet and not so sweet chickens) I was thinking something with potatoes for the chuck roast, is it possible to bake it, or must it slow cook on the stove top? Any advice is really appreciated.

I usually fry onions, garlic, brown the meat, pour over some wine and tomato sauce and either cook it on the stove top or put in oven. You can add potatoes if you want as well.

thanks raisin, how long do I bake for and at what temp? since I never made this type of meat, I don't want it too dry, nor do I Want to undercook, thanks!

I always cook it on the stovetop and it's delich!
if you can, rub with spices and garlic/wine/balsamic vinegar etc a few hours/night before.
saute a bunch of onions in pot, add roast, brown on each side. add some water to the pot-cover the bottom part of the roast and lower the flame. let it cook for abt 1 1/2-2 hrs. you can throw in potatoes or any other veggies after it starts cooking

I like to put it in one of those oven bags w/ onion, potatoes, carrots and onion soup or gravy mix. Then I'd let it cool and slice it then surround w/ veggies and pour gravy over everything. It reheats very well if you are cooking in advance.

thanks everyone for hte tips, I ended up sauteeing onions and slathering hte meat with salt and paprika, placing the meat in a pan with quatered potatoes with the onions on top , it came out so moist and delicioius, thanks for all the ideas.
