peel and quarter your fruits... when adding water, press down with your hand to make sure the fruits are not floating. The fruit should be just covered with water but not too much so they float. Add about 1/2 cup of sugar to an 8 quart pot, but taste. you can also add some vanilla and cinnamon, some cloves, jello packet... your choice. Cook until boiling then simmer until it's soft. You can even mash some of it with a potato masher for a semi mushy look.

you can make the Tutti Frutti Compote from Pupa Cookbook or Embrosia or cook up Jello with 2 cups hot water when it bubbles add apple sauce & bleneded frozen strawberries, cover & bring to a boil....

This is pretty much an exact recipe.

15 green apples
1 bag fozen rhubarb
fill pot to just about cover the apples.
add:
1 1/2 c. sugar
1 scoop vanilla sugar

Cook for approx. 2 hrs.
When done blend 1 container frozen sweetened strawberry and add.

Hearty appetite

(might sound sweet but green apples not sweet)

Delicios and easy

peel, core and quarter apples (or any other fruit you have such as peaches, plums, nectarines, etc)

Add 3 tea bags.

Add some water to the bottom of the pot and let simmer until the fruit is mush

Taste. Depending on the fruit you may need some sugar.

I prefer my compotes not too mushy.

Cooking apples and blackberry
Core, peel and cut 4 large cooking apples in pieces. Add 1 cup sugar (may need more depending on tartness), 2tbsp water and cook over low heat in non-metalic pot for 15min. Add blackberries and cook for additional 5 min. Turn off heat and let cool.

I also love poached pears, fresh figs or purple plums in red wine (sweet kiddush wine works perfect for this). Add cinnamon and sugar in the poaching liquid.

Our family takes about 6 apples (Cortland or a few different kinds at once) peel and chop/slice in various different sizes and cover with water and 1/2 cup sugar, bring to a boil then lower flame and simmer for a few hours until it starts to become a light caramel brown color.

It is really easy, just time consuming if you need the place on your stove.
