Roasted Mushroom and Potato Salad
from either Martha Stewart or Prevention Mag
mushrooms
olive oil
salt and pepper
potatoes, red if possible
parsley
vinegar
Preheat oven to 450 and quarter your potatoes and slice your mushrooms. Season with some olive oil, salt and pepper. Roast about 20 minutes and then add your parsley and vinegar. Serve warm.
