I really want to try something with Lentils. Ive never had them before but ive been hearing that their healthy and really good.... any ideas?

Firstly, what colour/type of lentils do you have?

The orange/red ones, I use it mainly for soup or lentil curry called dahl.
The brown ones, I tend to use it for medjadara which is lentil and rice casserole.

There is really delicious, nutty ones called Puys Lentil, which is small and greyish greenish colour. I boil them for 15-25min till cooked but not mushy. They're delicious with a bit of olive oil, balsamic vinegar and soy sauce. I serve them as salad.

Remember, no need to presoak lentils. I also find they're far less gassy than other beans.

I make curried lentil soup with brown lentils and potatoes- my family loves it

Saute a large onion , chopped. add 2 carrots, diced,and 2 sticks celery, sliced thinly and saute a bit longer. Add 2-3 potatoes, cubed (depending on size pf potatoes) and saute a few minutes. Season with curry powder ( about 1 tsp) but you can adjust later according to taste, salt, onion powder. add 1 cup washed lentils and water . Bring to boil and simmer till lentils and potatoes are tender. Then adjust water if necessary and seasoning . Enjoy
