Cinnamon Sweet Potatoes with Vanilla
from Prevention magazine
3 lbs sweet potatoes
water
1/2 tsp cinnamon or 5 spice mix
2/3 cup soymilk (we used Vanilla Enr Rice Dream)
1 T butter or marg (we left that out)
1 tsp vanilla extract (we left that out since we used Van Enr RD abaove)
smidge of salt & pepper to taste ( I skipped the pepper)
You cook your potatoes - I put them in a big pot with water and left them boil. If I had peeled and cut them up it would have been faster, though.
After there are cooked and peeled, I put them in a smaller pan with the spice and soymilk. You can add your fat if you're using it. Mash and then add the vanilla, salt and pepper to taste.
Can be made and reheated 5 days hence. Serve and eat hot !
