I offered to make some salads for someone's kiddush. I need some recipes of salads that are elegant for a simcha, delicious and can be made in advance (no lettuce salads!) Can anyone help?

not sure about elegant, but broccoli/craisin/cashew salad? couscous? pasta & veggies? linguine/sauteed peppers & onions? I can give you recipes if you want. I'm sure I have more, but I can't think.

purple cabbage salad

2 bags cabbage

2 spoons mayo
3 spoons sugar
2 spoons vinager

salt
pepper

bunch of scallions
a few spoons toasted sesame
1/4 cup roasted slivered almonds

pepper salad which actually has different color peppers sliced, kirbys in circles,purple onion in rings,carrots in circles. can also add baby corn if not using yellow pepper. its in a vinegar,sugar oil dressing.if u want the recipe just let me know here and ill post it

chinese style noodle salad:

saute garlic and fresh ginger (this is what makes it so special). add v thin strips carrot, red pepper and some bean sprouts. plus any other veg you like such as baby corn. add a little soy sauce and a little sugar.

mix above mixture with just-cooked noddles (still warm so they absorb the flavor).

colorful and sits well and can make large amount without too much effort. yum

Crudite with dips fit the bill perfectly... elegant, good for simcha/kiddush, no lettuce, can be made beforehand. I would use cherry tomato, celery sticks, carrot sticks, cucumber sticks, red/orange/yellow pepper strips, fennel sticks, zucchini sticks, raddishes etc. You can keep cut veggies in separate ziplock bags and serve in sectioned platters. Make a few different dips (I like mayo with mustard and onion soup mix, mayo with ketchup and a dash of tabasco, garlic mayo or pesto, hummous)

Cherry tomato salad

Cut cherry tomatoes in half or 1/4 if they are huge
brown pine nuts in a bit of oil- keep an eye on them since they burn quickly
thinly slice chives

mix all together and chill. No salt or spices needed!!

Sorry I am not giving amounts, but I usually use a few baskets of tomatoes and about 1/4 cup pine nuts per small basket of tomatoes, and then add the chives according to how it looks - you dont want them to overpower the salad.

Is the hearts of palm salad with avocado? I like that salad but can't make it in advance. If it is something else, can you post it please too?! thanx again!!!

probably not so elegant, but it's colorful (and delicious)

dice as many different kinds of vegetables as you want- I usually use several different color peppers, tomato, celery, purple onion, avocado, mushrooms, carrots, olives, cucumber, whatever else suits your fancy. dress with olive oil & spices- I usually use onion & garlic powder, salt & pepper. My dd and I can sit over a huge bowl of this salad & eat all day.

A zesty marinated salad. Will last a couple of days in the fridge.

1 pint cherry tomatoes
2 celery ribs, sliced
¼ cup black olives, sliced
⅓ cup green olives, sliced
¼ cup parsley, coarsely chopped
1 small garlic cloves, minced
⅓ onion minced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
salt and pepper to taste
Toss all the ingredients in a bowl, season and let sit at room temperature for some time before serving

another delicious salad!
Asparagus Mushroom Salad


1 bunch asparugus
2-3 portabella mushrooms
red pepper
orange pepper
yellow pepper

Sprinkle asparugus and mushrooms with olive oil, salt and pepper - broil for 5-7 minutes

slice all ingredients thin.

1 cup olive oil
3/4 cup vinegar
5 tbsp sugar
1 tbsp salt
1 tsp pepper
1 clove garlic

(makes a large dressing- you can half it)

Th hearts of palm salad is fairly easy you slice up hearts of palm baby corn and sour pickles and add grape tomatoes if large ones cut in half.
I use 2 cans hearts of palm to one can baby corn and a few sour pickles depends on the size of the pickles. The dressing is a little salt olive oil and pepper.
The sessame noodle salad is originally from kosher pallette but I have varried the recipe slighly
1lb of cooked spagetti or linguini or such shape
6 table spoons of splenda or sugar
6 table spoons safflower oil
6 table spoons rice vinegar I use 3tbsp of rice vinegar and 3 tbsp of garlic rice vinegar
6 table spoons soy sauce
2 table spoons soy sauce
dash of hot sauce or crushed red pepper flakes
aprox 6 scalions sliced
sesame seeds
Take all the dressing ing. minus the sesame and scallions place in a plastic container and shake up can be made a few days in advance just shake before using.Pour over spagetti add sesame seeds to desired amount scallions are optional they add nice color and dres sit up for a simcha I use for a reg. shab. I keep seperate and may add to a small amount as that spoils faster than the salad. I find it tastes best if it marinades a few hours before you serve it.

I have a really easy sesame noodle recipe:

1 box spaghetti, cooked and drained

for the sauce, mix:
1/2 cup soy sauce
1/2 cup toasted sesame oil -- ive used regular canola oil
1/3 cup sugar

toss together and pour over pasta.

add 3 scallions, thinly sliced -- I never add this, my fam doesnt eat scallions

toss is some sesame seeds if you want.


or a corn salad --
1 can white corn (or just use 2 yellow)
1 can yellow corn
1/2 red pepper cut up small
1 pck frozen small peas

cobime and for the dressing its just olive oil salt and pepper

my new favorite - broccoli salad

head of broccoli
carrots
red onion
craisins
cashews (I use mixed nuts - no peanuts)
sunflower seeds

3/4 cup mayo
1/4 cup vinegar
1/2 cup sugar or splenda (or skip it altogether) ...
