they are really strong tasting, and I'm sure they're very healthful. does anyone have a good way to cook them that hides their flavor a bit but retains the nutrients?

Beet tops--Yum! Cook it the same way as chards or spinach. It can be strong--the trick is to boil them first. I usually boil for 4-5min, then sautee with chopped garlic. (That's what we do for Rosh Hashana simanim.) Or once boiled you can chop them up and put them into scrambled eggs, or cook with meatballs and tomato sauce.

Here most frum people only buy bug free greens which need only a wash. Certainly they would have to be checked otherwise.

Yes, you check bugs the same way as any other leafy vegetables like spinach. I separate stalks and leaves, usually throw away outer leaves. for the stalk stems, trim/cut them and soak in soapy water.
