3 jumbo potatoes, peeled
1 large onion. peeled
1 1/2 cups flour
1/2 cup oil
3 eggs
1 T. salt
1/2 T black pepper
2 T. warm water
1 packet yeast (2 1/2 tsp)
In a small dish mix the yeast and water. Let stand for ten minutes. (should get foamy)
Grate potatoes and onions. Place in a large bowl. Mix with yeast and remaining ingredients.
Pour into a greasted 9x13" pan.
Let rise for 1 hour.
In a preheated oven (400 degrees) bake for 50 - 60 minutes. Should get golden brown on top.
This is really delicious.
Sometimes I will bake it in three medium size loaf pans, instead. If you do adjust the baking time.

Thanks! I was really looking for a recipe that uses leftover challah (sorry if I didn't mention that in the OP) Can I subsitute challah for the flour? And how much? TIA!
