Yummy Pesach Duck Sauce made w minimal ingredients!

I made this sauce for tonight's chicken, and it was delicious. My sister made it too, and everyone was licking the pot. Enjoy!

1 Tbsp oil
1 large red onion, finely diced
6 Tbsp sugar
1/2 tsp fresh ginger, minced or very finely chopped
1-1/2 Tbsp lemon juice or juice of half a lemon
2 tsp potato starch
1 cup orange juice
salt and pepper to taste

Saute onion with oil and sugar over medium flame for 10 minutes, until syrupy.
Add ginger and lemon juice to pot.
Disslove potato starch in orange juice, and add to pot.
Season with salt and pepper to taste.
Cook until the sauce thickens.

It's tastes very authentic. It might taste a bit different than store bought duck sauce, but it is not any less tastey. The flavors are amazing.
Both my sister and I made it on the stovetop with chicken bottoms, and we found it as good as regular duck sauce chicken.
My sister uses her own freshly squeezed orange juice and lemon juice, and she says her duck sauce chicken must taste better than mine Smile

sounds yum ... now if you simply add a piece of white chicken to your pot ... I'll be over to taste it Wink (never thought of using ginger on pesach)

can you do without ginger? and apple juice instead of orange juice? ( I don't have orange juice for pesach)

I doubt it, orange juice is what gives it its main flavor and tang, I'm assuming.

I could not find ginger this year in our stores; I heard something about it being not for Pesach according to the Alte Rebbe's Shulchan Aruich; does anyone know about this ?

The ginger gives it real flavor, but if you can't get it, it would taste good without it too.

How do you think this would come out without the potato starch? It's the only thing on the list that we don't use.
