Here's one I made up to try something new and fancy:
I rolled the chicken pieces (thighs, legs, & wings) in duck sauce and then in matzah meal (but you could sub crushed nuts) and piled into my crockpot. It came out so yummy, tender, etc that it was falling off the bone and was finished in record time.

My usual is to throw a whole chicken or pieces into a crockpot bag, add veggies (onion, carrot, zucchinni), spice (oregano, basil, paprika, soup mix, whatever), a dash of water, seal the bag, plop in crockpot and zehu!

Wow, the crockpot 20-40 clove garlic chicken looks amazing. I can hardly wait to try it!

Btw ClaRivka, do you use Balsamic vinegar?

Place potatoes (or balls of foil) at bottom of crockpot. Season whole chicken using whatever you use on Pesach. Place in crockpot. Cook.

Pour oil to cover bottom of crock pot.
Slice an onion into rings and line the bottom.
Slice potatoes (approx 6 or more if you can fit) into rounds and layer on top of onions.
Place chicken thighs on top of potatoes.
Shmear with duck sauce, paprika, salt and garlic powder. (If you don't use duck sauce on Pesach it will still come out great without.)
Pour a bit of water (1/2 cup?) into crock pot.
Turn on high for a few hours, then to low until ready to eat. Mine usually cooks on high for 5-6 hours, then on low for the next 2-5 until we are ready to eat. Eight hours total should be fine though.

This sounds so simple but it's delicious - the potatoes are soft and dark and the chicken is tasty and so soft and juicy.

Try it once - you'll love it!
