Triple chocolate raspberry mousse cake

don't water too much ... a recipe I created ... gotta figure out how to write it out ...

chocolate sponge cake
layered with chocolate mousse
covered in chocolate ganache
with tons of fresh raspberries on top

if you have a nice raspberry pie filling you can put between cake & mousse for even more razz

need 2 bowls

8 eggs separated

in whites put 1 cup sugar and 1 tsp vanilla then whip till thick and peaky - like whipped cream

in yellow add:
1 cup sugar
1 tsp vanilla

then mix and continue to add:
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup oil
1 cup pareve milk
1/2 cup cocoa

mix & then fold second mixture into the previously beaten whites ...

bake in 2 9" round pans 350 for 1 hour

mousse:

1 1/2 container rich's whip
2/3 cup confectionery sugar
1/2 cup cocoa
1 tsp vanilla

whip good & thick

two containers fresh raspberries
one smashed (with a bit of sugar) leave the other whole

chocolate ganache:

3/4 cup chocolate chips
some rich's whip
melted in microwave and mixed till smooth

to build the cake:

take a cake board with doily or cover with aluminum foil
let cake cool
cut cake in half and also even out top layer somewhat
put one layer on cake board
layer some mousse
layer smashed raspberries
next layer of cake
more mousse
ganache glaze only on top (not down sides)
surround top and base of cake with whole raspberries

with the second cake you can either save it - make a second one with more mousse & stuff ... or even make a third layer for height and triple the FUN !!!

anyone who makes this owes me big time ...

well - I tend to throw things into the bowl ... figured I should jot down what I do so that I can finally have a recipe ...

mind you I did it for you cookielady ... be happy and go bake one ... maybe for mother's day ...

Ok green, I am planning to try this soon. It really sounds good. It would be even better milchig, maybe it would be worth making that way Shavous time.

because I'm making this today Tongue Out

I've since added raspberry mousse to my construction as well ... so the bottom half is raspberry pink & the top half is chocolate mousse topped with ganache & fresh raspberries for garnish ... yummmmmmmmmmmmmmmmmmmmm

whats the recipe for raspberry mousse? and ganache on top? could I beg you to edit the original with these new additions so I could save it in my recipe box together? would love to make it!!!

I only edit recipes irl ... I try not to edit posts

the ganache is in there ... the raspberry mousse I made up - you might have to wait a year till my next birthday if I have to conjure up ingredients on paper

btw I no longer add sugar to raspberry mash - simply add a spoon of raspberry jam to cut the tartness

as for raspberry mousse - rich's whip mixed with raspberry jam and a little confectionery sugar [to taste]

Never made this yummy looking recipe but I've done similar (minus the separated eggs.) I've taken to adding some raspberry jello (powder) to the liquid whip. I find it stabilizes it and gives it a nice flavor and color.

When I want the chocolate to have a raspberry flavor I'll do the same except maybe add it to a bit of boiling water first before whisking into the ganache. Or not. I've used raspberry jam in a ganache (as much as 1/3 cup to cover a 9 inch round - my sis in law calls it my melted jelly ring cake)

Also, since I can never split cakes evenly enough (or I do but then they break during transfer), I've taken to baking the batter in a sheet pan (jelly roll sized) and slicing the baked cake in 3 even rectangles for a nicely sized log. My kids want to know why the tape measure has cake crumbs on it!
