Honey Chicken (Quick & Kosher)

1 chicken, cut into 8 pieces
3/4 cup honey
1/4 cup soy sauce
1/4 cup olive oil
1 Tbsp garlic powder
1 tsp black pepper

Mix together all sauce ingredients.
Pour over chicken.
Bake, uncovered, at 375 for 1 hour, or until slightly browned.

[I leave out the olive oil, and reduce the black pepper amount.
I use 4 chicken bottoms, and sometimes separate the thighs from the drumstick, as suggested.]

It's delicious!

Is this doable with boneless chicken breasts? My dh and kids won't touch bottoms - or anything with bones.

And if it is fine for chicken breasts, do I do half the recipe for one lb? (about 4 pieces)

If you like the texture of baked chicken breasts, than it should come out fine.
You can definitely halve the sauce ingredients for 1 lb. of breasts, and bake the cutlets for about 20-25 minutes.
Maybe turn the cutlets halfway through baking, or marinate the chicken in the sauce for 2 hours before baking.

Love this recipe! I actually got it from a real life friend who didn't know which cookbook it is from, and even tried it before I saw it here. Just letting you all know that it is really yum!

It is not so sweet due to the soy sauce, garlic and pepper, they tone down the honey.
