My favourite!
Trim the bottom and hard bits on the outside. Cut in quarters lengthwise.
Slice fennel bulbs very thinly. (I use a mandolin but I'm sure you can do this with food processor.)
Make dressing by mixing equal amounts of olive oil, orange juice and lemon juice, season with salt.
Pour over fennel, let it marinate about 30min (or longer).
My SIL makes braised fennel which is also delicious.
Chop fennel bulbs into small-ish pieces, heat small amount of oil and sautee for a minute or so.
Add water (for about 2 large fennels I use a bit more than 1 cup) and parve soup powder.
Simmer for 20min stirring occasionally till fennels are soft but not mushy.
Turn off flame, squeeze juice of 1/2 lemon. Can be served hot or room temp.
She sometimes poaches chicken with it.
