I had this a few times as a kid and remember it being delicious. I believe it's a Yemenite type bread. I may have the word wrong. It is basically made in a covered pot in the oven and the outer parts of the bread were crispy and oily, inside was moist and delicious. Anyone?

It's not challa. Yemenites wash to their Shabbat pitot. Kubbana is eaten on Shabbat morning. It's so good but very very high in fat (we buy it sometimes and split it to use for 2 weeks).

My dh has been asking for this for years, as he used to eat at a Yemenite house when he was a bochur. Does anyone have a Hilbeh recipe to go with the Kubaneh?

My recipe is quite simple. Soak about 2tbsp fennugreek seeds overnight in water. Throw away the top part of water. Blend in food processor with leaves from a large bunch of corriander, 1/2 cup water, 2-3 garlic cloves, a think slice of peeled fresh ginger root, salt, a pinch/good measure of red zchug and juice of 1 lemon. It whips up to a green goo, you might have to thin it a bit more with lemon juice (if you like it tart) or with water. Yum. I think this is more indian baghdadi than yemenite, but my timeini friends didn't complain and asked for more...

Thanks for the link. It sounds like a lot of work but I will attempt it, iy'h for this Shabbos.
