after looking at tons of recipes, I am kind of going along the lines of not hassling with the startch. I will make what I can without it, and we wont starve.

Shayna, I find that with all my recipes, a week of Pesach isn't enough for everything we want to make, and I do NOT patche with homemade potato starch or kishke or soup nuts or anything like that!

I have made pesach for 3 years without the use of a food precessor, but that may be because I don't use one either all year round.
The custard recipe is really yummy...try it if you have an oven. I bought a convection oven last year and it was way worth it.
Also a big hit in my house was pears cooked in grape juice.

When we grate potatos for kugle we let it sit for a bit and then take the potatos put them in a diff bowl and let the potato juice sit the starch will settle to the botom and then you have to drain away the dirty water and add new water mix and let it sit again, drain the water away again till you have "clean" potato starch.
"warning" takes lots of time and lots of potatos... last year we got enough to make some maccaroons I also made a "jellie roll" but it was mostly egg
