What exactly is roasted chicken, and why should it be harder to make on Pesach than all year round?

B/c all year round I use sauce etc on Pesach we don't use any spices besides salt. Besides I want to vary it a bit this Pesach and can't use mushrooms or any unpeelable veg.

Oh, I see. How about chopping lots of onions and shredding lots of carrots and put the chicken on top to roast. Then you baste the chicken with the juice that comes out and if everything goes right, it turns a lovely brown color and looks like it was baked with paprika. We have tried it a few times on the stovetop (till recently we didn't have a kosher lePesach oven) and it works out re color about half the time and it's always delicious. In the oven it ought to acquire a lovely color regardless.

Do you use potato starch? If so, you can make a sweet and sour sauce with lemon juice, orange juice, sugar and starch and pour it over the chicken. You can bake it with pineapple chunks, though if you have a lot of people it'll take forever to prepare enough pineapple.

You can make shnitzel.
Dip chicken in egg, then in potato starch and salt.
