Food to make during chol hamoed

We're having guests over chol hamoed. I'm not sure what kinds of foods to make. Should it be close to yom tov food, or regular food we would have during the week?

It's really up to you. We usually stick to foods that can be served by both...

stuffed cabbage
mashed potatoes
garlic green beans
meatballs
potato knishes
rice with mushrooms
you could serve kugel to give a more yom tov feel
sesame chicken
glazed salmon

there are some ppl with a minhag to wash and have a seuda because even though its 'chol' its still yom tov. but if u dont hold that way, u can really make any kind of dinner u want. I would probably be bored of all the meat and chicken but my husband is not big on dairy. if u can, make things like pasta or pizza at least one night.

I would choose a country and do a theme niht like mexico:
quesidillas
chilli relenos
mexican lasgna
chips and salsa
tortilla soup
OR
China
Chinese food
eggrolls
etc
or
Italy
Garlic bread
lasagna
baked ziti
Etc.
Stay away from boring brisket, chicken, chicken soup etc.
Try to be inventive at that point I think people are dying for something different

My DH eats a kazayis of meat each day of chol hamoed so I try to have something with meat.

So my main dish is normally meat: Meat Lasagna, Meat Lasagna roll-ups, meat-balls, BBQ steak (not so much yom tov food, but meat, and expensive), roast. If I'm not in the mood of meat I'll sever chicken with some deli meat, like pastrami.

A kugel, apple, sweet noodle, doughless potato knish. or a starch like roasted potatoes or orzo.

A hot veggie, roasted veggies, beets, green beans, etc.

Simple dessert: apple cake, compote, or cake from the freezer (not every night)

I sometimes serve soup but if I do then it is a big pot that I serve over and over.

I would do fleishig, but not typical shabbos/yt food. A theme is a good idea.
