When I was a kid, we would wait until the world series every year and then take out our esrogim that had been packed away so that during the commercials we could make them into besamim. So in the spirit of the all-american championships, here's the one I made this year! I tried to make a little design instead of just covering the whole thing in cloves. Not so happy with that part but it's ok.

nice! how do you manage not to pierce through to the flesh inside? I've given up b/c I always eventually get one clove going into the flesh.

What do you mean? It has to go all the way through the skin, otherwise it doesn't stay in.
You poke it with a sharp object, right through to the flesh, and then stick the cloves in.
Some will fall out - don't be disappointed.

No, they pierce the skin, which is very thick but dry. Once you hit the flesh, called pulp--the part that's the actual fruit, like a lemon, iow the juicy part-- it will rot exactly like any other fruit that was cut and left lying around.

they don;t rot but they do shrivel up and get hard after a while.... that's when we roll them in cinnamon

they dont rot because the cloves acts as a preservative

When it shrivels up it keeps the cloves from falling out...I made one once and it lasted at least until the following Sukkos...
