ok I got a bunch of chicken in the freezer and the same pesach cookbook as last year so I was wondering how y'all cook ur chickens. I'd like to get some new ideas!

#1 - white wine onions potatoes and carotts
#2 - lemon juice, sliced lemons, onions

Here's another:

Lemon Garlic Chicken

5 cloves garlic, chopped
3/4 cup lemon juice
1 Tbsp. salt
1/2 Tbsp. pepper
1 Tbsp. oregano
1/4 cup oil
8 to 10 pieces chicken

Combine the garlic, lemon juice, salt, pepper, oregano, and oil for a marinade. Marinate the chicken overnight.

The next day, bake in a 350F oven for 1 1/2 hours.

Last year I sauteed a ton of sweet onions and cooked the chicken in them on top of the stove. I also added salt and a little water. It made a lot of gravy and was delicious!

Cook a ton of peeled tomatoes with a little salt, oil (or if you use shmalts) a touch of liquified sugar (to cut the acidity), and sauted onions.

It's great with meatballs, samon or white fish, fishballs.
Good luch. How about using wine.

I cook chickens the same way, my husband loves the oregano. But, I sometimes skip the oregano and pour on apricot jam (just a teaspoon on each piece of chicken) and place some dry apricots on top. It's delicious.

Actually, the best way to cook your chickens is to bbq them!

Last year my friend bought a new bbq right before Pesach. They had bbq hot dogs, chicken, burgers, fish you name it on pesach.

To alleviate cooking problems pre-pesach I think I might bbq some things and keep my kitchen clean before the change over.

My mom layers the bottom of the pan with onions, places down the chicken skin side up, tops with more sliced onions, and sliced oranges. She adds pepper, and more orange juice, and some white wine, I think.
Its yummy.
