Sauteed peppers
from same book

olive oil
garlic
red onion, sliced
oregano
3 peppers, various colors; sliced
pinch salt
1 or 2 tomatoes, chunked
pepper to taste

Heat some olive oil and add your garlic and onion. Cook for a few minutes, add your peppers and salt and spice and cook for about 20 more minutes. Add tomatoes. Add fresh pepper to taste.
