Everyone here keeps talking about using parsley for Karpas. Do you all mean parsley root? Or do you actually use parsley leaves for Karpas?

I don't know about others, but we use it along with radishes or potatoes. Not plain parsely leaves.

I grew up on cucumbers, but we have switched to potatoes.
Rodent, my Rabbi from Passaic would eat a salad. Since he isn't our main Rav we can't do that till consulting Rav Riskin. But I keep wanting to.
My Rav from Passaic eats more as it keeps one satisfied and thus one pays more attention to the Seder. I think it also keeps people from becoming as giddy. I guess he holds as well that one eats more than a kazayit.
