My 2.5 yr old is constantly asking for "something else to eat" and "something different". He cannot digest peanut butter, bamba, tomatoes, oranges, any dairy products, white sugar, white flour, or red meat very well - all these things cause problems. He generally likes fruit, but we have to limit the amount he eats. He is not so interested in cucumbers, which he used to like a lot, or rice cakes or crackers, which I think he thinks are kind of boring. I think he also prefers more filling types of snacks. What sort of snacks would you give him?

Steamed baby carrots? Can he chew them raw? Maybe make a dip for them if he wants it more exciting...like chummus or something like that.
Can he have other nut products?
My kids will eat corn or chickpeas for snacks as well.

That seems like a lot of things.
How about pepper strips, rice cakes, corn cakes (pretty tasty), ww crackers, dried mango(takes longer to chew), watermelon, carrots dipped into tuna (my kids enjoy that), brown rice noodles...?

whole wheat bread spread with any spread he can/will eat

tortilla chips & guacamole for dipping (you don't have to add tomotoes, can just mash up some avocado & mix with lemon or lime juice & some salt)
homemade whole wheat muffins or granola bars, can be made without any white sugar using honey, maple syrup etc. for sweetener
fruit kebobs (fresh fruit cut into chunks & threaded on kebob sticks or toothpicks for mini kebobs)
mini whole wheat wrap with chummus or tuna or spread of your choice, rolled up like a jelly roll & then sliced
whole wheat macaroni salad
sliced peppers with salad dressing for dipping
sliced turkey breast

My 3 and 2 year olds love, in descending order of excitement:
frozen blueberries
almonds
baby carrots
honey-baked lentils
anything you can roll up in a wrap -- can roll it up with humus or add beans, leftovers, turkey, whatever -- my three year old will eat empty.
canned kidney beans
