A trick I got from the back of a fried fish box-
if your baking in the oven (and leaving uncovered) and you want it to be more crispy, crinkle the tin foil under the cutlets before drizzling the oil. I think the fact that it's not flat makes the cutlet come out crispier. I've tried it and it's really great!
