Let me add to the question:

Does anyone know of a butternut squash kugel recipe that does NOT include tons of mayonnaise and margarine? And tastes good?

From aish.com (I make it without the cookie crumb topping)

Butternut Squash Casserole

Description

Serves 12.

Ingredients


8 jars babyfood butternut squash
½ cup canola oil
¾ cup non-dairy creamer
2 tablespoons flour
½ teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon ground cloves
1 cup sugar
3 eggs
½ teaspoon coconut extract or vanilla extract
½ cup vanilla wafer crumbs (about 15 wafers)
¼ cup brown sugar
2 tablespoons margarine

Preparation


Preheat oven to 350 degrees. In a large bowl combine all ingredients except vanilla wafer crumbs, brown sugar and margarine. Pour into 9x9-inch baking dish and bake for 50 minutes. Combine wafer crumbs, brown sugar and 2 tablespoons margarine. Sprinkle on top of kugel and bake for another 20 minutes.

SQUASH KUGEL
2 boxes frozen winter squash (butternut)
1 stick melted margarine
1 cup flour
1 cup sugar
3 eggs
¼ cup pareve creamer or soymilk
½ tsp baking powder
1 small can crushed pineapple, squeeze out juice (I put it into the orange juice container)
Combine and bake at 350 for 35 degrees.

1 medium size butternut squash, pureed (2 packages frozen)
1/2 cup margarine, melted
4 heaping tbsps flour
3/4 cup sugar (or less, to taste)
3/4 cup mayo
3 eggs
1 tsp vanilla

Mix all ingredients. Sprinkle cinnamon on top. Bake at 350 degrees for 1 hour.
