Breaded chicken cutlets: whats the secret?

For yummy shnitzel thats soft try coating in seasoned mayo and then crumbs.
I season my mayo with garlic powder, salt, black pepper paprika.
Btw I am really impressed with everyone's tips and tricks.
You really are a bunch of shnitzel experts

I prepare 2 ziploc bags, one with beaten eggs and one with flavored bread crumbs. I drop the chicken into the egg bag, seal it, and shake vigorously. then I transfer the chicken into the crumbs bag, seal, and shave vigorously. then I place the chicken into a foil pan with oil in it, and put inside a preheated oven. works for me!
