I think I see! Out of curiosity, would it be treif in that case, or just uncomfy?

I don't have a clear answer to this question. And since I don't have an answer, I don't do it.
And I have to admit that my very sweet rav has no idea what kombucha is.

I agree that a sefer on this would be very useful. Not offering answers, but I have a question: did you ever find out if kombucha mushrooms tend to be infested with tolaim and, if so, what can be done about it?
Hrmm, have you ever seen a kombucha "mushroom"? It doesn't look like a mushroom- its just a gelatinous whitish browning "thing" made out of cellulose, no place for a bug to hide...

I haven't seen one IRL. Are you saying that the texture is somehow such that a bug could never get into it?

What exactly is a kombucha mushroom? Is it actually a type of fungus?

Yup. Its a translucent "disk" that you can see right through.
Its a symbiotic growth made by a combination of various bactteria and fungi.

It ferments tea to make a probiotic medicinal antifungal antiviral antibacterial (as well as many other things) drink that is also tasty and delicious.
