I've never made rice kugel before, but thought I'd make it for this Shabbos. Anyone have a recipe that's not too horrible for you? Also, I'd like to make it with brown rice, so any adaptations are welcome.
TIA!

Rice kugel isn't horrible at all!
1 C uncooked white rice
2 C water
1/3 C raisins
4 eggs, lightly beaten
1 C orange juice
3/4 C sugar
1/ C oil
2 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Preheat oven to 350 degrees.
Lightly grease a 9-inch-by-9-inch square pan or a 10-inch springform pan.
Cook rice in the 2 cups of water until soft but not mushy.
While the rice is cooking, soak the raisins in warm water to soften.
Combine eggs, orange juice, sugar, oil, vanilla and remaining spices in a bowl.
When rice is cooked, combine with other ingredients.
Drain raisins and add to the mixture.
Pour into the greased pan.
Bake 1 hour.
