I really want to get my engagement ring insured after hearing too many horror stories about diamonds that fell out of their settings. It has already been appraised, anyone know of a good jewelry insurer, or how this process even works (dumb newlywed here).

I got my insurance through an insurance broker. He was the one who handles our apt. insurance and car insurance.

You can add a rider to your homeowner/renters policy.

I added it onto my parents homeowner's insurance. Iy"h if and when we own a home, I'll add it to ours and take it off of theirs.

The best thing to do is at it on to an insurance you already have, such as car or home insurance.

DH does insurance for a living; he says you should add it to your policy for your car or your renter's policy (which is much more important.)
Your husband's tefilin is insured, right?
How much is the ring worth; if it's under a certain amount it's also not worth it.
