I made a DELICIOUS mexican lasagna for dinner this week.
I layered ground beef mixed w/ sauteed onions and red peppers (and ortega seasoning) with tortillas ripped into strips, refried beans, rice, salsa, and topped off w/ fake sour cream.

I have a recipe for Mexican Meat-Loaf.
It's somewhere in my recipe-box....
I'll go look for it, and post the recipe a little later....
I've seen ways to make Mexican Corn-Bread too, and I'm sure you can substatute the milk with s/t else, although I'm not sure if you think corn-bread is very shabbosdick.... (it wouldn't replace the Challah of course, it would be a side-dish).

Let me know how it is - don't blame me if it's gross! I used Near East Wild Rice b/c they were out of Mexican.

Mexican CornBread Recipe
2 cups corn meal
1/3 cup melted shortening
1/2 tablespoon salt
1 tablespoon sugar
2 eggs
1/2 teaspoon baking soda
3/4 cup buttermilk or milk
1 can cream-style corn
1 can chopped green chile peppers (4 oz)
1 cup of shredded cheddar cheese
PREPARATION:
Preheat oven to 450°. Mix corn meal, shortening, salt, sugar, eggs, soda and milk. Add corn and chile peppers. Pour half of mixture in large, greased 9-inch pan. Put half of grated cheese over batter.
Spoon remaining batter into skillet or pan and top with remaining cheese. Bake at 450° for 25 minutes. Enjoy.
(I got this recipe from a southern foods site. I guess you can leave out the cheese, and substitute the milk, if you're making it for a Meaty meal).
Sometimes, when I make cornbread, I pour the batter into muffin tins. It's more fun to eat this way!!! You can split each muffin in half, and put in a pat of butter. Mmmmmmmmmmmmm...........

Tex-Mex Meat-Loaf Recipe
Ingredients:
1 1/2 pound ground beef
3 slices bread, torn into small pieces
1 egg
1 can (10 oz. size) diced tomatoes & green chilies
1 small onion, chopped
1 teaspoon chili powder
1/4 teaspoon black pepper
1/2 cup chili sauce
1/4 cup shredded cheddar cheese (Only if you can get that FAKE CHEESE, as we heard about in the "Freaky Dinner" Thread.... LOL) :-)
Directions:
Preheat oven to 375 degrees F.
Combine the first seven ingredients. Spread into an ungreased 8.5 x 4.5 x 2.5 inch loaf pan. Bake 1 hour; drain excess drippings. Spoon chili sauce over cooked loaf, (then sprinkle with Fake cheese.) Bake an additional 15 minutes.

Mexican rice-
I learned this recipe from mexicans so its not exact.
borwn a cup of white rice in oil with a chopped onion
small can of tomato sauce and a small can of crushed tomatos or stewed. salt pepper garlic cumin bring to a boil and reduce to a simmer for like 20-30 min. I usally put in a can of corn and chopped green pepper before it cooks and my guests always love it.
