Mexican Peaches

3 peaches or nectarines
2 cups juice (pineapple or orange)
1 cup honey
1/4 cup Tequila
fat
3 peaches or nectarines, pitted & halved
vanilla ice cream for serving, optional

Combine the juice and honey in saucepan and bring to a simmer and let cook until slightly thickened, about 15 minutes. Add the Tequila and let cook a little more. Turn off heat and set aside.

You cut open the fruit and discard the pit. Brush with a little oil and grill about four minutes.

Add the grilled fruit to the saucepan and let sit about 20 minutes. Serve with vanilla ice cream.
