ISO vegetable muffin recipe

Anyone have one? I found this phrase posted on an old, old thread, and I thought it woudl be a good way to get my kids to eat their veges Smile

This is Mama Bear's recipe

Vegetable Muffins

• 1 onion, diced
• 1 potato, peeled
• 1 sweet potato, peeled
• 32 oz. frozen California mix
• 4 eggs
• 1/4 cup mayonnaise
• 3 Tbsp flour
• 1 heaping tsp salt
• bread crumbs
• cooking spray

Sautee the diced onion.
Cook potato and sweet potato in water. After boiling for 20 minutes, cut them into eighths.
Add California mix to boiling pot. Cook all together for 10 minutes longer.
Drain and mash vegetables very well. Add sautéed onions, eggs, mayo, flour, and salt.
Grease muffin tins; pour vegetable batter into them. Top with bread crumbs.
Bake in oven preheated to 350, for 1 hour.

Note: use large muffin tins, as the muffins shrink and making them in the regular sized tins leaves them looking a little paltry.

So you mash all of the vegetables and use them as part of the batter? Interesting!

Is California the one that has broc and cauliflower in it? You think I could use the regular vegetables...You know, with carrots and corn and peas and things? I don't know if the corn would mash, but that probably wouldn't matter, right?

Yes, mash it all together. It's like kugel muffins.
Yes again to the california mix Smile It's broccoli, cauliflower, and carrots.

California has carrots in it too. If your kids like corn/peas then use that.
