Warning, this has a very strong aroma of pomegranate, and to me, it's a bit too much. I'm afraid it's going to be a collosal disaster, I might actually make another gravy to make the tastes more mild.

I'll post my planned menu here, but I'm afraid I won't end up making everything I planned. As you see, most of the effort is on the first two meals, when we're having invited guests. The other meals are mainly for the "regulars".

FIRST NIGHT :
Half and half Challah Gefilte fish with heads
Techina
Vegie Chatzilim
Potato salad
Turkish salad
Ground zucchini salad
Israeli salad
Macaroni tuna salad
Apple chicken
Tzimmes with flour kugel
Pomegranate fruit salad
Pomegranate cake, apple honey cake, carrot cake, teigelach (whichever I manage to get done)

FIRST DAY :
Challah
Salmon with some kind of sauce
Babaganoush
Fried eggplant in tomato sauce

canadamom,
For your eggplant fish dish,
I could not find Eden breaded eggplant anywhere. Do you think I can egg and bread the eggplant and spray it with pam and then layer with the frozen fish, or do I have to bake it in the overn (or fry) first before I layer it? TIA

The pomegranate cake is from Imamother. The other stuff isn't so much by recipe, and I don't have time to post complete recipes, I'll just give you the general idea.

Vegie Chatzilim - the same way you make babaganoush (I do it on an open fire, wrapped in foil), roast 2 eggplant, 1 tomato, 1 red pepper. Blend in food processor with fried onion, salt, garlic.

Turkish salad - I don't know if that's what it really is, I just call it that. Sauteed onions, garlic, green pepper, diced tomatoes with salt on a low fire for a long time. I usually add hot red pepper (cayenne or similar), leaving it out for RH.

Ground zucchini - haven't made this one yet, trying for the first time - sauteed onions garlic and zucchini, grind in fp, when cold add a bit of mayo.

Fried eggplant - wash, slice and salt eggplant. Let stand, then egg and fry. Sautee onions, garlic, green pepper. Add tomato paste, water, spices, bring to boil. Put eggplant slices in sauce, turn off heat. e, water, spices, bring to boil. Put eggplant slices in sauce, turn off heat.

I would definitely bake it first. actually whenever I make eggplant parm. I put the eggplant under the broiler, that way it becomes crispy like fried eggplant. good luck

Apple Honeycake
It's not an original recipes, but I don't know where it's from. It's good, though!

one cup sugar
1/2 cup honey
3 eggs
2 cups flour
1/2 tsp salt
1 tsp baking powder
two medium apples, sliced, any kind
1 tsp cinnamon
1 tsp vanilla
2/3 cup oil

Mix and bake in 9 by 13 pan for 40 minutes at 350 deg

Believe it or not, we were going to eat out every meal, with work and all I didnt see cooking as a possibility at all.
A very close friend of mine had more faith in me than I, I called in to work, took off, and wallah!!!
Dinner is served Wink
I accomplished A LOT BH yesterday for the few hrs kids were in school, did the rest this morning. And on yom tov all I will cook is the fried sesame chicken nuggets, the potato puffs, and chullent for shabbos.
I planned on making yummy desserts, but there's always succos coming up.
And guess what! I have some things in the freezer for succos already! Smile
I doubled some recipes, and SO glad I did!!

Mimismile- I assume its too late but you can use this recipe a diff time. I'll look up the sunken apple cake later beH from KBD (the green one).
Make the shnitzel a bit thinner (like in half), put mushrooms, zucchini & onions in food processor then fry and add salt, pepper, garlic powder, some soy sauce. Put a little of the mixture in middle of shnitzel and fold/rollR over depending on length of shnitzel. Coat in egg & flour. Fry one by one on high heat. I didn't end up making a sauce, but you could fry onions/garlic & mushrooms in Margarine. Add salt, pepper and if you want soy sauce and/or onion soup mix. Add 1 tsp flour at a time slowly to thicken to desired thickness. You could also use mustard, EVOO and soy sauce or soy sauce, honey, olive oil & a bit of lemon & crushed garlic for a dressing. The shnitzels were delicious!
