below is recipe- I made it first like this and it was a bit too thin and liquidy, tasted great but hard to work with. when I doubled batter it came out better. then you can keep rest in fridge and pop in microwave for rest of week.
or try recipe below as is, but DONT overmix- its good if there are still some clumps.
1 cup whole wheat flour
2 tsp baking powder
1/4 tsp salt
little less than 1 cup 1% milk
3 large egg whites
2 tsp oil
1 tbsp sugar or honey(do more if you like it sweet)
1/4 tsp cinnamon
1 tsp vanilla
butter flavor cooking spray
Mix all dry ingredients in a bowl. Add wet ingredients to the mixing bowl and mix well with a spoon until there are no more dry spots. Don't over-mix.
Heat a large nonstick pan on medium heat. pour 1/4 cup of pancake batter. When the pancake starts to bubble, you may add your fruit if you wish. When the bubbles settle and the edges begin to set, flip the pancakes. Repeat with the remainder of the batter.
I sometimes add in chocolate chips for husband, grated apple for me (with more cinn) or blueberries.
REALLY YUMMY!!!

Here is another whole wheat pancake recipe that is easy and delicious as well:
2 cups whole wheat flour
about 1 Tbsp sugar
1 tsp salt
2 tsp baking powder
2 cups milk or water (I use water and it tastes very good)
2 Tbsp oil or applesauce
2 eggs
mix dry ing.,
make a "ditch" in dry ing. then add wet ing. to it.
Enjoy!
