What to do with leftover lokshen?

I made too much lokshen for yom tov. its too late to freeze it though. I've tried to make leftover lokshen with fried onions in the past, but it was basically tasteless. Anyone have a better idea for a side dish or a TINY kugel or something?

I would throw it out because it can go bad very fast and besides, it is not an expensive commodity.

saute some chopped onion, garlic, celery, add some chop meat and tomato sauce or puree, season to taste, simmer 20 minutes or so and either mix with the noodles or serve on top of them.

How much is a little bit of lokshen? If you're talking just a cup or so, add salt, pepper, parsley, some olive oil , balsamic vinegar, some chopped fresh garden vegs and top with some chopped nuts or sesame seeds for a lunch salad for one.

Do you want to make fritatta?

It's a few beaten eggs, some sautten veggies - like onion, mushrooms, red pepper, or whatever you like. Mix in your noodles. Bake at 350 until brown.

When you make this milchig, you can add some cheese and it's very nice.

Thanks for the ideas! Well..its already past dinner time over here in Israel, but if they still look alright tommorrow then I'll either make the chen's salad or the sarahG fritata thing (I actually have some red peppers I wnated to get rid of) depending on if I'm in the mood of hot or cold!!Thanks!

Cabbage and lokshen. Sautee the leftover noodles in olive oil with fried onions cut-up cabbage.
