Pepper Quiche
Crust: (I usually double just the crust b/c I use a big pan)
1/3c oil
11/4 c Flour
2-3 TBS water
salt to taste
Mix and spread dough out in pan.
2 Medium onions
3cloves garlic, sliced
3 different colored peppers, sliced
Saute the above until golden and let cool.
Add to pan:
2 eggs
1/2c Milk
salt, pepper to taste
Mix and pour into crust. Top with goat cheese (or any cheese you like, I use mozzarella when I can't find goat). Optional: top with slices Black olives
Bake 350 until browned
