I do baked potatoes with gvina levana (soft white cheese) and melted yellow cheese. The oven is on for cakes/kuggles anyway...

Some people are busy cooking for Shabbos and have a hard time cooking 2 intensive menus.
Some people have one oven, and using it for Shabbos food makes it hard to use for supper food.
Some people have one sink, and having a milchig dinner when cooking for Shabbos is overwhelming.
Some of these people overlap. I was one of those with all 3 dilemmas till a few months ago.

especially now friday is so short I really need to start preparing thursday night. even if its just peeling veggies and making the challa dough, and shopping. But I just make whatever is easiest.
in the summer things are a bit calmer...there is enough time on friday to shop and cook.

I either make double supper on wednesday for both wednesday and thursday, or I cook extra of something for shabbos, like chicken and rice, and make it early enough that it's ready before supper time on thursday. I don't love doing that cuz I feel it takes away of the specialness of the shabbos food, but lately I do it anyway.

My mother a"h was from England. She used to say Thursday night supper is "catch as catch can", which meant find something in the fridge or make yourself some eggs or have cereal and milk. ( wonder if anyone from England ever heard this expression.) I usually make an easy supper likle scrambled eggs and whole wheat toast, or whole wheat pizza, or grilled cheese sandwiches or whole wheat macaroni and cheese with chocolate pudding for dessert. Everyone loves it.
