Zeppole
Joy of Kosher mag

Zeppole (pronounced zep O lee) are small fried Italian donut balls, made from cream puff dough. Try these little puffs of donut heaven, for a new spin on your traditional Chanuka donuts.

canola oil, for frying
3/4 cup farmers cheese
1/4 cup milk
2 eggs, lightly beaten
1/2 teaspoon pure vanilla extract
1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1 pinch salt
1/2 cup confectioners sugar, for dusting

Fill a large pot halfway up with canola oil. Heat over medium-high heat until oil reaches 375 degrees. To test the oil without using a deep fry thermometer, dip a wooden chopstick into the oil, and wait to see if the oil starts steadily bubbling around the chopstick. At 375 degrees, the oil around the chopstick will bubble very vigorously.
In a medium bowl, combine the farmers cheese with the milk, and whisk together until creamy. Add eggs and vanilla. Set aside.
In a medium saucepan, combine the flour, sugar, baking powder, and salt. Stir in the set aside wet ingredients. Place the saucepan over low heat, and mix gently until combined. The batter will be sticky.
Prepare a measuring tablespoon, and a second spoon, to help scoop out the batter neatly. Drop batter by the tablespoon into the hot oil, a few at a time. Do not overcrowd the pot. Zeppole will turn themselves over as they fry. Fry for 3 to 4 minutes, until Zeppole are lightly golden.
Drain on paper towels. Dust heavily with confectioners sugar. Serve warm.

Yield: 2 dozen Zeppole

I was looking forward to homemade doughnuts....omg now I'm afraid I will have to make them on more than one night. This recipe looks great for a milchig night & easy enough.

What's the difference in taste and texture between doughnuts that have yeast and those without? Are the ones without- less puffy or dont rise like regular donuts? I've noticed both types of recipes

Each recipe is different, so it's hard to make a generalization.
But these are puffy, and very tasty from the cheese and milk. The people who tasted them here said they were better than any of the other traditional fried donuts make with yeast.

Not the same as knowing you tasted it & approved Wink. I value your opinion! You've prevnted much wasted time in the kitchen, not to mention agmas nefesh for what would have not been worth it... Glad you like these, I k now I will too
