I am expecting my second baby any day, and my husband works long hours. I have no clue how I am going to make dinners on top of taking care of two kids by myself. I have frozen several meals, but would like to have some food fresh at some point. Does anyone have any good recipes (preferably vegetarian, since meat can be really expensive)? Thanks so much in advance!!

I know you wanted vegetarian but this turned out yummy unfortunately I don't know the exact recipe so improvise and add your own vegetables etc but use this as a base to work from.
osso bucco
mushrooms which I quatered
carrots cut into large chunks
can't remember if I added onions
I didn't bother to brown the meat first. Just put everything in the crockpot together with some red wine, a beef stock cube or equivalent, some tomato paste, some herbs possibly thyme, parsley - not Rosemary as it is too overpowering. It needed a very long time to cook in the crockpot but the result was great.
