DD made a zucchini soup that she learned to make in Home Ec, but it tastes “plain”. It’s jut zucchinis, water, and salt.
What spices would be good to add?

basil, oregano, thyme, parsley, garlic, onion, pepper, bay leaf . a bit of hot sauce or worcestershire. carrots, celery, string beans. niblets corn. crushed tomatoes. what they gave her is not soup--it's a watery cooked vegetable.

Yes.
I meant "any or all, depending on what you have and what you like." I would use all that, plus.

Sara- I would add some Chicken Soup Mix (just a bit) it will add alot of flavor!

Sautee sliced onion and garlic and add them in. I also agree with chen on the mozzarella idea. It will be heaven.
Next time you make it start the soup with sauteeing the onion, garlic and zucchini.

I would add, garlic, chickpeas, lemon juice, a bit of cumin, chopped parsley fresh, small peices of meat, small potatoes, maybe some mint and tice on the side, also maybe some turmeric.

I found an amazing zucchini soup recipe on allrecipes.com, calling for curry powder.
it tastes so good-the curry mellows out with cooking, and the result is heaven. I know curry is an acquired taste for some people though...let me know if you want the recipe.

I do that. It is DELICIOUS. Nobody can believe that is all the ingredients. I use olive oil. And I add salt and pepper. Make sure you're adding enough salt. It brings out the flavor and makes a big difference.
