I have a butternut squash sitting in my fridge. Do you have any ideas of what I can do with it? I thought of soup, but have never done that and am wondering what else I can do with it. Thanks for all the forthcoming ideas!

I cut them into pieces, score the surface, sprinkle with kosher salt and bake until it's soft. We all LOVE it.

I peel and cut into cubes.
saute an onion thats in bigger pieces, add salt and then a bit of water and the squash.

Soup, kugel. side dish with cinnamon and marg.

Peel it and cut it into small pieces. Combine some brown sugar with cinnamon and mix it into the pieces. Bake covered until soft. Sweet and delicious.
